So what would you like to know???
Whelp, firstly, I went to “The” prestigious Culinary Institute of America in upstate NY and have been doing this and that throughout the hospitality industry in some pretty awesome, hotshot places. Such as, the infamous Waldorf=Astoria Hotel in NYC executing the hot line in banquets. A few years at Lincoln Center running the FOH in a few of their buildings. I also worked for a couple celebrity run restaurants like The Modern by Danny Meyer and The American Table Cafe and Bar with Marcus Samuelsson. Etc., Etc., so on and so forth.
Ok, yeah, so I’ve been around the hospitality block a time or two. And I really hate to sound like I’m tooting my own horn BUUUT it must be said, like a Honey Badger in the Savannah, I have fearlessly survived the tumultuous male dominated restaurant industry for almost 20 years now! (WOW! SMH! I don’t know where the time has gone.) So yes… I guess you could say I am ready to spread my wings and fly…although Honey Badgers don’t fly and are pretty volatile.
NOW, I am a confident, seasoned, young “enough” professional to take on the big world of the Culinary Arts and open my very own! There is no greater triumph than to prove to Mom that her endless years of student debt struggles have been worth it to see her eldest child be successful at what she loves to do most; Eat, Feed and Host a bunch of people! Fingers crossed, you, as my new Guest, will help me live that dream and make Mom proud.
Yes, Chef is my childhood dream becoming reality!
But what would you REALLY like to know???
Can I cook? Am I really that hospitable? Is this real life???
HA! Well, I’d say yes to all of the above! But there’s really no other way of knowing unless you actually come and share a meal with me. I mean, where else can you get a southern inspired Maple Fried Oatmeal entree that is truly a slap-your-mama-dessert-treat-from-heaven but we call it breakfast?! Or a super healthy, blow-your-mind-it’s-still-delicious European cereal consumed hot OR cold called Muesli?! OR, on the total flip side, a Puerto Rican staple called Sorullos; that is just a Spanish name for some damn-ass delicious sweet corn fritters stuffed with gooey, melty hot cheesy delightfulness?!!! ALL organic, ALL local, ALL under one roof???! Umm? I’m just sayin’… a menu this fun has some culinary genius behind it! Ok I’m definitely NOT a genius but you get where I’m going with this.
Yes, Chef is an eclectic menu stemming from my intermingled, confusing long line of ethnic origins which consists of: Puerto Rican, Spaniard, French, Filipino, Chinese and ALL American! Wooh! That’s a melting pot if I’ve ever seen one.
Yes, Chef is about lively food in a place we want You, our guests, to make your own. So I invite You to explore a new twist on how you enjoy breakfast and let your taste buds get energized!
