When you get home & known you’re suppose to feed your kids an actual meal but only have cinnamon toast crunch… you improvise!
Super easy homemade Mac n Cheese & of course paired with a chicken cutlet! Didn’t have broccoli (merp) so used some straggler brussels I found meandering in my frig were just as delicious!
!RECIPE ALERT!
Now cooking is not an exact science-we cooks leave that to the bakers of the world- so taste your food along the way and if your new at this just take your time. Eventually this will be what it is, a quick 20 minute meal from start to finish.
Lets begin…
Start with a roux, which is equal parts butter n flour (you can make this gluten free using another flour, like oat, but just remember it will give it a little bit of a different flavor) 1T flour : 1T butter
cook out the roux – which literally means mix it around at the bottom of the pan with a wooden spoon on medium heat until it turns from white to a “blonde” and it smells a little nutty (about 2-3min)
Ok next…
Umm, maybe two, and a half?, cups of milk give or take (half n half is yummier if you have it), and very slowly pour the milk into the roux while you easily beat it with a whisk… to get out the lumps.
Bring down the heat to med low
For my less than stellar cooks out there, now you need to:
STARE at your pot!
stirring it leisurely with the same whisk you just used for about 2-4min to incorporate the milk and roux and allow it to thicken. Don’t burn your milk mixture or let it boil over!
(Almost to the end!)
Add About a cup or two of your favorite grated cheese (I don’t recommend mozzarella! You’ll just have a glob at the bottom of the pan lol!) I used a sharp cheddar because, again, it was left over from some far off date when we had company over for cheese & wine.
Grab the wooden spoon from the first step and mix your cheese in until it melts (make sure your cheese is cut really small or grated so it melts quickly)
Now we are at the end! As soon as the cheese is melted Shut off the heat, add salt & pepper to taste **REMEMBER “less is more,” so be ginger with the seasoning here.
Get your half empty open box of pasta & cook per instructions (IN WATER of course! NOT THE CHEESE SAUCE ?♀️) I had some left over so that was easy.
Toss the Drained warm pasta with your fresh cheese sauce to however much your little heart desires
Cheese cook time: about 10min!
Chicken: about 15
Pasta: about 15
(you would cook the pasta and chicken simultaneously)
Veggies: 5min and/or open a can! I did! Love Bush’s Baked Beans but I can’t do veggies in a can ?
But MULTITASKING is the name of the game here folks… You can do it! I believe in you!
